My Brownie Problem:
- My brownies tasted good but were crumbly, and the portion sizes were too big no matter how small I tried to cut them, which only resulted in a bigger mess of crumbled-up brownies. So, I gave up on perfecting brownies.
My Brownie Solution:
- The other day, when I saw the lone bag of Bob's Red Mill brownie mix in my panty, I knew there had to be a solution and something I could make with the mix, so I searched for cookies made with brownie mix. I found the answer I wanted at SimplyWhisked.com!

- What didn't work for me was the canola oil in the recipe, since that's not a staple in my home. Reading through the comments, someone suggested 1/3 cup butter instead, which is what I did.
My Recipe:
Here are the ingredients and measurements for the Bob's Red Mill Gluten-Free Brownie Mix cookies I made in my Ninja Foodi Digital Air Fry Oven. (Note: this was made at a low altitude)
- Bob's Red Mill Gluten-Free Brownie Mix (21 oz package)
- 6 tablespoons softened butter (salted)
- 2 eggs
- 1 tablespoon water
- Reese's Peanut Butter Chips (as much as looks good)
How I Made the Cookies:
- Mixed all ingredients in a bowl until well combined.
- Used a strainer when adding the brownie mix to the bowl to remove clumps
- Chilled in refrigerator for 1 hour to solidify the mixture
- Also chilled in refrigerator after making each pan of cookies to keep mixture from softening too much
- Lined Ninja Foodi sheet pan with parchment paper
- Hand-formed balls of the mixture, placed on lined sheet pan and pressed flat (9 on a pan)
- It's messy the softer the mixture is which is why chilling the mixture helps; using a scoop might be good, but I just rinsed my hands in the sink after each batch
- Baked cookies in air fry oven for 7 minutes at 350 degrees Fahrenheit on the oven setting
- Pre-heating is less than a minute with a Ninja Foodi so there's no point in setting the time and temp until a pan of cookies is ready to go in the oven
- I rotated each pan of cookies 90 degrees halfway through the bake time
- Removed cookies from oven and left on pan for 2 minutes
- Moved cookies to cooling rack for 10 minutes before storing in cookie containers
- The yield was 42 cookies
- Ovaltine jars are excellent for reusing as cookie containers!
The Result:
- This is what I want a brownie to taste like! Both my husband and I love them, which is a positive sign.
- The portion sizes are great and not as messy as a brownie.
- I never would have gotten 42 brownies out of the same amount of brownie mix if I made them as brownies.
- The cookies came out rich and chocolatey, soft in the middle and crisp all around the outside. I am done with making brownies the traditional way and will now make brownie cookies!
