Costco Dinners for Two: Soups with Cheesy Sourdough Bread Dinner

With two tubs in each package of soup, that leaves us with a meal for the next week; and since I use half a tub for a meal, I use the other half for a lunchtime meal. We keep the extra tubs of soup in our outbuilding refrigerator where we keep extra food from crowding up our kitchen refrigerator.

This is the first year we added a side of cheesy sourdough bread to the mix and it's perfect with the soups!

We both love soups from Costco and the fall season is the right time to enjoy them. 

Preparation & Clean-Up:


Soups (Broccoli Cheddar Soup; White Chicken & Wild Rice Soup) with Costco rotisserie chicken breast meat

I prepared the soups on the stovetop; I set the burners to medium-ish heat, stir often, and let them heat up while my husband takes a post-work shower.

This year I've started adding the Costco rotisserie chicken breast meat to our soups which adds a little more protein to dinner. I cut up the chicken chunks with kitchen shears, and I highly recommend the chicken in the Broccoli Cheddar Soup because it's delicious! Even though my husband's soup comes with chicken, more chicken doesn't hurt. 

More Soup Additions: Two more things I have added to the Broccoli Cheddar Soup that aren't pictured: bacon and broccoli, two of our Costco staples! The bacon comes with two packages, and I prepare one package of bacon at a time so there is always cooked bacon in the fridge; we always have plenty of broccoli in the freezer since it comes with four 1-pound packages, and adding it to the soup is a great use for it because more broccoli doesn't hurt; adding a slice and a half of cut-up bacon, along with chunks of frozen broccoli, plus the chicken, makes for a fabulous and filling soup dinner!

Ninja Foodi Digital Air Fry Oven
I toasted the sourdough bread topped with butter and cheese in the Ninja Foodi Digital Air Fry Oven on the Toast setting for 6 to 7 minutes on the Dark II setting for the temperature.

I don't use the big tray that came with the Ninja Foodi for toast; I use another smaller tray and rack from the toaster oven we had that was replaced by the Ninja Foodi.

Post-dinner clean-up was easy: two soup pans, two dinner bowls and a salad bowl (my husband gets a small salad before dinner while I prefer my salad during lunch), two bread plates, silverware, and the toast tray/rack; all hand-washed, dried, and put away that night except the toast tray/rack that I prefer to air dry overnight.
